Prune Cake


1/2 c shortening
1 c sugar
2 Eggs


1 2/3 cups flour
3/4 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp nutmeg
1/4 tsp cloves
1 c buttermilk
3/4 c chopped cooked prunes

Preheat oven 375.
  1. Take dried prunes and cover in a saucepan.  Bring to a boil and then turn off the heat.   Let sit while you make the cake.
  2. Cream shortening and sugar well.
  3. Add eggs one at a time, beating well
  4. Sift in flour, salt, baking soda, baking powder, cinnamon, allspice, nutmeg, and cloves
  5. Add buttermilk and mix throughly
  6. Mince prunes and add.  Mix well
  7. Pour into 2 8' inch round pans that have been buttered and floured and bake for 35 minutes.

Frost with lemon butter frosting when cool.
