Sugar Cookies

These cookies have the right crumb texture while still being soft. The lemon gives them just enough tag to offset the sweetness of the frosting. I use this frosting. It is so simple and quick and doesn't require you to leave your butter out for hours.

 

Ingredients

  • 1 cup of butter (room temp)
  • 1/2 cup shortening
  • 2 cup of sugar
  • 4 eggs
  • 1/2 tsp vanilla
  • 1 tsp lemon juice
  • 5 cup flour
  • 2 tsp baking powder
  • 1 tsp salt

Directions

  1. Mix the butter, shortening, sugar, eggs, vanilla, and lemon well. 
  2. In a separate bowl, mix dry ingredients and then add them slowly to main batter. Dough will be stiff.
  3. Chill several hours in the fridge
  4. Preheat oven to 400F
  5. Roll out thin (1/8") and cut into shapes on a floured surface
  6. Bake 6-8 minutes
  7. Let the cookies cool for two minutes on the cookie sheet and then transfer to a wire rack.
  8. Let the cookies completely cool before frosting or storing. 
This makes about 4-5 dozen large cookies. The yield really depends on how thick you roll them and what kind of cookie cutters you use.
