These cookies have the right crumb texture while still being soft. The lemon gives them just enough tag to offset the sweetness of the frosting. I use this frosting. It is so simple and quick and doesn't require you to leave your butter out for hours.
Ingredients
- 1 cup of butter (room temp)
- 1/2 cup shortening
- 2 cup of sugar
- 4 eggs
- 1/2 tsp vanilla
- 1 tsp lemon juice
- 5 cup flour
- 2 tsp baking powder
- 1 tsp salt
Directions
- Mix the butter, shortening, sugar, eggs, vanilla, and lemon well.
- In a separate bowl, mix dry ingredients and then add them slowly to main batter. Dough will be stiff.
- Chill several hours in the fridge
- Preheat oven to 400F
- Roll out thin (1/8") and cut into shapes on a floured surface
- Bake 6-8 minutes
- Let the cookies cool for two minutes on the cookie sheet and then transfer to a wire rack.
- Let the cookies completely cool before frosting or storing.
