Zuppa Toscana

 Ingredients


  • 1 lb ground Italian Sausage
  • 5 cups of chicken broth
  • 3 cups of water
  • 2 large potatoes, sliced in half, and then in 1/4 inch slices (for keto sub daikon radish)
  • 2 garlic cloves, minced
  • 2 cups kale
  • 1 cup heavy cream

 Directions

  1. Brown sausage in your soup pot and drain the fat.
  2. Add chicken broth and water to pot and stir.
  3. Place potatoes (or daikon) and garlic in the pot.
  4. Cook on medium heat until potatoes are done.
  5. Salt and pepper to taste.
  6. Simmer for another 10 minutes.
  7. Turn to low heat.
  8. Add kale and cream.
  9. Heat through and serve.
