Borscht

Ingredients 


  • 1 lb Beef shank or stew meat
  • 2 cloves of garlic 
  • 3 beets
  • 2 yellow onion (not sweet)
  • 3 large carrots
  • 3 potatoes 
  • 1/2 head of cabbage
  • Beef bullion
  • Vinegar
  • Sour cream
  • Salt
  • Pepper

Directions 

  1. Cut beef into bite size pieces and brown in some oil in the soup pot with the garlic. Salt and pepper to taste.
  2. While the meat is browning, peel and dice all the veggies.
  3. When the meat is browned, add enough water and bullion to cover meat and veggies and add the beets.
  4. Boil for 30 minutes, then add the carrots, onion, and potatoes. Cook for another 30 or until the vegetables are soft. 
  5. Add the cabbage and cook for another 10 minutes.
  6. Serve with sour cream if desired.
