Ingredients
- 1 lb Beef shank or stew meat
- 2 cloves of garlic
- 3 beets
- 2 yellow onion (not sweet)
- 3 large carrots
- 3 potatoes
- 1/2 head of cabbage
- Beef bullion
- Vinegar
- Sour cream
- Salt
- Pepper
Directions
- Cut beef into bite size pieces and brown in some oil in the soup pot with the garlic. Salt and pepper to taste.
- While the meat is browning, peel and dice all the veggies.
- When the meat is browned, add enough water and bullion to cover meat and veggies and add the beets.
- Boil for 30 minutes, then add the carrots, onion, and potatoes. Cook for another 30 or until the vegetables are soft.
- Add the cabbage and cook for another 10 minutes.
- Serve with sour cream if desired.
