Peroshki

Ingredients 

  • 1 packet of yeast
  • 2c of warm water
  • 1tbsp of sugar
  • 1 1/2 c of flour
  • 2 eggs
  • 2 c warm milk
  • 1 stick of butter melted
  • 6 1/2 to 7 c of flour

Directions 

  1. Mix together the first 4 ingredients until a "pancake" like batter is made in a large bowl. Cover and let sit for 15 minutes.
  2. Add the rest of the ingredients, mixing well until the dough is firm and not too sticky. Put into a very large oiled bowl, flipping the dough to cover it in oil, cover and let prove for about an hour. It should double in size.
  3. Punch down, flip again, and prove for about an hour.
  4. Divide dough into small portions and fill with desired fillings. 
  5. Fry in oil heated to about 350 until golden brown on both sides. Serve with sour cream.
