These are a great keto staple that can let you get in lots of fat easily without a lot of extra protein or carbs. They can be a little bit time consuming because of the wait for cooling. I've also added some mint extract to the coconut butter layer that was good. I now omit any sweetener as well. Once set, these store well in the fridge (no need to keep them in the freezer.)
Ingredients
- 1 Cup of coconut oil (melted)
- 3/4 Cup of coconut butter (melted)
- 1 Teaspoon of Stevia (optional)
- 8 Tablespoons of cocoa powder (unsweetened)
- 1/2 Cup of salted butter (melted)
Instructions
- Place the coconut oil, Stevia (optional), cocoa powder, and butter in a pot and melt until all of the ingredients are combined.
- Place baking cups into your muffin tins.
- Pour 1 tablespoon of the mixture into each of the baking cup.
- Freeze for 15 minutes.
- Pour 1 tablespoon of Coconut Butter into each of the cups.
- Freeze for 15 minutes.
- Pour 1 tablespoon of the mixture into each of the cups.
- Freeze for 30 minutes and enjoy.
